COIXSEED WITH GINGKO NUTS AND RED DATES
INGREDIENTS
- 1/2 cup coix seeds
- 1/2 cup gingko nuts
- 1/4 cup red dates
- 1-2 pieces of honey rock sugar
- 1 litre water
METHOD
- Rinse coix seeds and soak in water for 30 minutes
- Rinse red dates and gingko nuts
- Bring a pot of water to a boil and add the coix seeds and red dates
- Once coix seeds are cooked, lower heat and add rock sugar
- Serve chilled or hot
This barley recipe contains coix seeds, lotus seeds and red dates and is a sweet Chinese soupy dessert. It is a very light dessert, a gentle way to end a meal.
